PREPARE

Grab a small tasting glass.

In a pinch, a moroccan tea glass or small paper cup will do the trick.
Pour 2 tablespoons into the glass.

HEAT

Hold the cup.

Place the cup in your palm and cover the top with your other hand. Make small circles in your palm until the oil slightly heats up.

SMELL

 Explore the aromas.

Seek out familiar fragrances. Are your senses detecting scents from the ripe or green end of the taste spectrum? Ripe will hint at ripe bananas and tomatoes or stone fruits. Green will suggest green bananas and almonds, herbs, artichoke, and grass.

TASTE

Take a sip, slightly suck in through your teeth & swirl.

Note the pungent tones, spicy qualities, and heat textures in the back of your throat. Feel the bitterness and sweetness. Extra virgin, high quality olive oil will strike a harmonious, balanced sensation.
